    Looking more like a rock star than a chef, Simons is no doubt an eye-catcher: Spiked hair, tattoo sleeves, guyliner and a tight shirt is his signature look. So it's no wonder his culinary philosophy is just as unconventional. "In this day and age, chefs have a culinary responsibility to pleasure people. That's why I offer 'promiscuous dining'--the concept of eating several small plates and not being married to any one dish. I always suggest a glass of Champagne while you wait for your food; it's just like foreplay. Our dishes are designed to satisfy multiple senses and work together in harmony like two lovers. And by the end of dinner, perhaps you will be enjoying a cigarette outside with your dining companion."

The short rib grilled cheese, which is on the 8 oz. menu, is a very sexy dish. It's decadent, has a rich mouth feel, and is the ultimate late-night satisfaction."

"This dish stimulates all of the senses. Visually it is beautiful and all eyes are on this dish when it is brought out to the table. It offers a variety of textures and flavor profiles with its crisped skin, soft, melt in your mouth meat of the fish, dipped in the citrus soy dipping sauce, followed by the smooth and silky sesame soba noodles served as an accompaniment."

    With his boy-next-door appeal, chef Mahon shows his wild side when it comes to his mouth-tingling creations at 208 Rodeo. "Perception is reality in our business. Today, you have to have great tasting food, but it also has to look sexy. We all know guests always eat with their eyes first. Most of the time, guests look over at another table's food and order the same dish because it looks so good. Our fig salad is a good example of this. Made with creamy burrata, marinated figs, prosciutto, toasted hazelnuts, arugula and cassis syrup, it represents a beautiful contrast of textures, flavors and colors. You can't help but be drawn to the strength and excitement of the reddish hue of the figs. In my opinion, nothing is sexier than being confident and producing something that tastes spectacular."

    A natural beauty, chef Wolfson might seem to impart a similar effortless elegance to her New American cuisine, but her approach is distinctly meticulous. "I'd say a sexy dish on my current menu is the caramelized onion and parmesan tortellini with braised short rib ragu. Everything in it takes so much time and love--we braise the short ribs for 18 hours in lots of red wine and garlic, and making pasta by hand is so tactile and satisfying when the dough turns out just right. For me, nothing is sexier than rolling out perfect pasta dough and pairing it with braised meat that is so tender it just falls apart when you take it out of the pot."

    Direct from Italy, this Melrose hot spot's green-eyed chef is making quite a stir with his handmade pastas. "I'd say my sexiest dish is the Fettucine al Caviale. Think about it: To make the pasta, I have to touch the dough, shape it, cut it and give it a warm bath in salt and water. Then, to make the sauce, I need to bring the cream to the right consistency," he continues in his thick Italian accent. "When the pasta is warm I toss it in the cream and then top it with beautiful shiny caviar. It's delcious. It pops in your mouth."
