The Scene
The Spanish tavern concept has been updated with a California touch here and the 20-something crowd can't seem to get enough of it. Vintage photographs plaster the walls while the chef stokes a wood-fired oven in the corner. It's practically empty in early hours, but after 8:30pm, the small room hums with a chattering crowd.

The Food
Cobras & Matadors fills a vacuum in a nearly tapas-less town, with 17 varieties and authentic touches uncommon outside of Spain. Smear spicy lomo embuchado (dry-cured pork loin) on toast rounds and follow with a bite of Garocha (aged goat cheese). Patatas fritas are pleasantly salty triangles of fried potato, but can leave diners parched. The entrees are also meant to be shared, served family-style in pre-cut portions. Flavorful skirt steak is offset by pungent anchovy butter and smoky Idiazabal (Basque shepherd's cheese) sauce. Roasted game hen, though slightly overcooked, gets sassed up with sweet-sour Catalan sauce.

we went to the c&m on la brea. it didn't seem to be very crowded for a saturday night, but the service was sub par to say the least. one plate never arrived (despite asking for it four times); the potato dish with truffle oil was a bland and bizarre combination (in terms of texture and flavor and we actually had them removed from the bill); the silverware was dirty; we had to ask three people for salt ... i could go on and on. i think another person commented on how this is not authentic spanish food - i wholeheartedly agree. it seems to be more about accessibie food for a wide demographic rather than any kind of memorable dining experience. i will say the cheese plate was quite good - but not enough for me to recommend this restaurant to anyone. save your money and go to a.o.c. if you want a small plate tasting menu served by a professional staff with proper wine pairings.

Steven Arroyo just opened his 3rd C & M restaurant on La Brea at 6th (was just recently GOAT and before that Happi Songs). I just went and I tell you I couldn't be happier with the new location. It is much smaller then the other too locations but it still has outdoor seating (and you can drink outdoors at this one) and is also much quieter then the other 2 as well. The decor is spot on cool rustic and with a tweaked menu it was a very pleasurable experience that I will be returning to many many more times. And while it does have an $8 corkage fee (the Beverly Blvd. local does not) it is still a baragin. And with a Trader Joes right up the street it's a match made in wine/budget heaven. Trust me...the secret won't last long!! Get there now before the crowds find out about it.

Pros: EVERYTHING!!

Cons: Honestly can't think of any.
