In Short – After years of traveling to Baja California and enjoying fish tacos at beachside stands, Ralph Rubio opened his first restaurant in San Diego in 1983, banking on the south-of-the-border favorite. Today, Rubio's are located throughout the Southwest serving tacos, burritos salads and more.
