In Short – The mostly Chinese restaurant-dominated Hong Kong center also boasts this lone sushi haunt. An elegant, contemporary-styled white room with wood, bamboo accents and white linen holds a dozen seats at the bar, and even less tables. Signature dishes include salmon tartare with salmon caviar, spring roll with smoked salmon and shrimp, and salmon carpaccio with ponzu. Lobster roll and spicy baked scallops are local favorites, and the kitchen also dishes up traditional teriyaki and udon and soba noodles.
