Former nightclub owner Albert Mizrahi opened up All About the Bread in late 2009 because he "wanted a simple sandwich shop where the bread is very important ... the sandwich starts with the bread." Great bread, bland fillings.

I give it four stars because the bread is 5 star.
I had the Meatball sub, which was praised on Huffington post, and some red potato dill salad.
The place does not smell like the food...I was expecting an ambrosia-like aroma of bread and garlicy things. But it smelled like a hospital.
The bread is fresh and chew-crusty on the outside and just a little softer on the inside, as I like it most (yeah, I do have to take out my one temporary flipper tooth thing to eat it, but the bread is worth it).
The meatballs were mushy and bland.
No interesting texture, no discernible spice.
Even Subway has better meatballs.
And the ones from Trimama (which probably come a can from from Smart & Final, are way better, as are Adelle's refrigerated spicy Italian style meatballs).
The meatball is accompanied by good-enough provolone and wretched Parmesan.
I do not know how this sometimes happens but bad Parmesan tastes and smells regurgitated.
They do not obviously offer add-ons, which I would have liked, such as green peppers and onions, though i did not ask..
For take-out they give you a cup of supermarket-tasting marinara.
The potato salad...if you add your own celery and red onions is OK. But as they serve it, it is the blandest thing on earth, with no crunch at all.
My suggestions...go down the street and get Angeli Caffe arrabiata sauce, ditch that Parmesan and ask them where they get theirs, add at least celery to the potato salad even if you do not want to go all the way to red onions or even scallions...
Get smaller, denser, spicier meatballs.
I am rooting for this place to be great, as it is really convenient for me.
It shouldn't be about the bread

The name of this place is very odd to me, as I would think if it were all about the bread they would actually make the bread edible. The bread is incredibly hard and difficult to chew. If I'd had dentures I wouldn't have been able to chew through it. Judging from how busy they were I'm alone in my dislike for the bread. It would be nice if they gave you a choice of breads for those of us who don't like hard bread. I ate here when it first opened and had the same experience, but I thought I'd try again because I assumed they just had a bad batch of bread that day, but apparently that's how they intend it to be.
I also agree with a previous reviewer about the portions...I had a roast beef sandwich and it was very small amount of roast beef with a ton lettuce and a huge amount of bread. I will say that once I finished chewing my way through the bread the overall sandwich did taste good.
I will also agree with the previous reviewer on two other points...the staff did not look like they wanted to be there and the decor is very strange. There are only a few tables with a huge open space on one side where I would think they could put more seating.
If you really want a good sandwich I would recommend going a few blocks north to Santa Monica Blvd and La Brea and visit Jersey Mike's. A far superior sandwich and a lot more choices on the menu.

I was so excited to try this place because another member's review even mentioned Bay Cities as a comparison but i was extremely disappointed. I ordered the caprese and basically got bread with a tiny slice of cheese and one thin slice of tomato at first i thought there was nothing on it. My boyfriend ordered turkey and said his was just OK. The fresh bread is good but the sandwich was pathetic. I love bay cities and was hoping for a closer version but that is definitely not the case with this place. Also the staff looked miserable and its pretty bare inside. I don't think ill go back

Nothing beats Bay Cities, but All About the Bread brings crave-worthy sandwiches to Hollywood. The bread is baked every 30 minutes, so you're likely to have a fresh loaf to fill with a generous selection of meats, cheeses and toppings to customize your sandwich. Or choose from the great options on the deli's menu. Perfect for a quick lunch.
This place is still new, and they continue to add more items. Don't forget to pick up the delicious artichoke salad and potato side dishes before you leave!

I'm a total sandwich girl. I'm the girl at a fine dining restaurant trying to figure out how to make a sandwich with my dinner roll and filet without anyone noticing.
This place is great. Get your sandwich with the works, a combination of Italian marinated vegies and spicy peppers.
The best time to go is lunch time when the fresh bread they bake on premise is still hot
